Bricks Brownies

 Who doesn't love a brownie? These are my go to snack for pre race, post race or when I am craving something sweet that still has a stack of wholesome nutrition. As with everything else you'll find on here, they are gluten free, refined sugar free and entirely plant based. This is also another bulk recipe, making up to 50 serves  to decrease cost and make it easy to always have something nutritious available in the freezer. You can really have fun with this recipe and make it your own by changing around the type of nuts, dried fruit and add ins. My overall recipe changes each time I make them but the base remains constant. Hope you enjoy!

Ingredients

  • 250g nuts (Works best with mostly walnuts - I use 150g Walnuts, 100g Pecans)

  • 450g Pitted dates (try to find ones without added preservatives)

  • 75g Raw carob powder

  •  220g Peanut Butter (Can sub any nut butter in here)

  • 50 ml Unsweetened almond milk

  • 20g Chia Seeds

  • 20g Ground flax seeds

  • 30g Hemp Seeds

  • 2 tsp Vanilla 

  • 2 tsp Maca Powder

  • 50g Goji Berries


Process

1. Process nuts until they become fine chunks.

2. Add dates and process for ~1 min, it will remain chunky at this point.

3. Add peanut butter and process for ~2 min, it will start to clump together now.

4. Add carob, chia seeds, flax seeds, maca powder and vanilla and blend until it forms a chunky powder-like consistency.

5. Add 50ml unsweetened almond milk and blend for ~2 minutes or until you can easily clump it together between your fingers. If too dry, add 20ml almond milk at a time unt

6. Stir in goji berries by hand. *

7. Pour into one or two baking trays, depending on size and how thick you like your brownies (I typically like them thinner so use two trays).

8. Press lightly into tray, then sprinkle hemp seeds on top and press into tray as firmly as you can. 

Place trays in freezer for at least an hour, then remove, chop to desired size and enjoy!

Best kept in the freezer in airtight containers and then remove an hour or so before you want to eat them (or eat them straight out of the freezer, just as good!).
